2 cups heavy cream
1 cup milk
4 oz. Egg Beaters, or egg substitute
2/3 cup sugar
1 tsp. Instant espresso coffee powder
1 tbs. Vanilla extract
¼ cup cognac, or brandy
Combine ingredients in a blender or food
processor. Blend until smooth. Cover and
chill in the refrigerator until ready to
freeze. Pour into ice cream maker and follow
the manufacturer's instructions for freezing.
Makes: about 1 quart
